Lemony Lentil Salad


Lentil Salad

1 cup black lentils

1/2 cup chickpeas

1 big bunch of radishes, sliced thin and roughly chopped

1/4 packed fresh leafy herbs (combination of mint and dill recommended)


Optional Garnishes:

Sliced avocado, crumbled feta and a handful of fresh leafy greens.


Lemon Dressing 

1/4 cup fresh lemon juice

2 tablespoons olive oil

1 teaspoon mustard

1 teaspoon honey

1 clove of garlic, pressed or minced

1/4 teaspoon sea salt

Freshly ground pepper to taste
