French Onion Soup

French Onion Soup

½ kg onion

4 tablespoons butter

1 tablespoons flour

3 cups beef or chicken broth

2 bay leaves

Salt and pepper to taste

6 slices toasted baguette/crunchy toast 

Grated cheese

Cut onions into thin rings. In a large pot, melt butter and saute onion, stirring constantly. Do not allow onions to brown. Add flour and stir. Add broth, bay leaves. Set aside the soup if you are not serving it right away. Before serving, reheat the soup and pour into a large ovenproof bowl or 6 individual bowls. Put the slices of bread on top, sprinkled with grated cheese. Place bowl(s) under the oven broiler until the cheese melts. Serve immediately.

Note: The French use Parmesan, Emmental or Gruyere cheese for this recipe, but you can substitute cheddar.
