Curried Lentil Rice with Yogurt
In a large pan add 3 tbsp of oil.
Add 8 cardamom pods, half a tsp of cumin, cinnamon, turmeric, and dried coriander.
Stir well then add in 2 tbsp of curry powder.
Stir for a minute then add in 2 cups of washed and drained basmati rice. Season with some salt.
Stir well then add a cup of yellow lentils.
Stir well into the rice then add 2 and a half cups of boiled water. Simmer and cover with a lid. You may need to add a little water later.
In a glass bowl add 5 cartons of plain yogurt, 1 very finely chopped garlic clove and 1 very finely chopped cucumber. Stir, then season with a little salt.
When the lentil rice is ready serve and add the yogurt on the side.
Garnish the dish with fresh coriander. You may also serve some mango chutney with this dish.
