Chicken curry with vegetables
In a pan add a large knob of butter. Melt, then add in 1 chopped white onion, 2 cinnamon sticks, 6 cardamoms, half a tsp of turmeric, 1 tsp of coriander seeds, 1 tsp of mustard seeds and 3 tbsp of a curry powder of your choice. Mix well together until the aroma starts to flow (approx. 2 minutes). Now add half a kilo of cubed chicken fillets and stir for a few minutes. Now add a cup of pre-boiled peas and a cup of diced potatoes. Stir well for 3 minutes. Now add in a cup of coconut cream, stir well for a minute then simmer. Season with salt, and leave for approx. 30 minutes. Add a handful of freshly chopped coriander before serving. Basmati rice or naan teams well with this dish.
