Stuffed Whole Chicken

 

 

 

Stuffed Whole Chicken
Clean and pat dry the chicken.

In a bowl add:
2 cups of bread crumbs
5 slices of chopped beef bacon
5 finely chopped leaves of fresh sage or basil
Juice of 1 orange
1 red apple, peeled and chopped into small cubes
Salt and fresh black pepper

Mix all the ingredients together then using your hands stuff the chicken, pushing the mix all the way inside.

Tie the legs with a string.

Spread butter all over the chicken skin, smothering it well, and drizzle a little olive oil. Season with some salt and pepper.

Place the stuffed whole chicken into a pre-heated oven at 180 degrees. Check every 20 minutes and baste using the juices from the chicken. Cooking time approx 40-45 minutes.

Lovely with a hearty salad or some oven roasted garlic and potatoes!
