Shrimp Spring Rolls



Shrimp Spring Rolls
Boil half a pack of medium shrimps until they turn pink. Drain and set to one side.
In a large pan boil some glass noodles. Drain and set to one side.
In a pan add a little sesame oil, and 1 tbsp of tom yum paste.
Add in 2 finely chopped green onions, 1 tsp of grated fresh ginger, 2 finely chopped courgettes, and stir well. Then add in a plate of fresh bean sprouts and stir for a minute.
Bring out a packet of  spring roll wrappers.
In a small bowl add a little water with a tsp of honey to use for the spring rolls.
Chop the shrimps into halves.
I add the noodles first to the roll, then place the shrimps on top, then spoon in a little of the cooked mix.
Now roll the spring rolls and close the ends using the honey water to paste them well.
Fry the spring rolls and serve with some sweet and sour or sweet chili sauce.
