Spinach Cantaloupe Salad with Mint

 

We fuel our body when we feed it with whole foods – foods as we find them in nature. The more whole foods you “add-in”,  the less space you have for junkier, more processed foods. You start to feel better and crave more nourishing foods.

 

I love the effect of combining fruits with greens. Do you?

 

Ingredients 

Cucumber| 1½ cup, sliced

Spinach leaves| 4 cups

Cantaloupe| 1 cup, sliced

Avocado| 1 cup, sliced

Red bell pepper| ½ cup, diced

 

Dressing 

Vinegar| 1½ tsp.

Clove garlic| 1

Olive oil | 3 tbsp.

 

Directions

Mix all ingredients in a large salad bowl.

Mix dressing ingredients and drizzle over the salads.
