Red Basmati Rice

  1. In a large pan add 4 tbsp of olive oil, 3 finely chopped garlic cloves, 1 finely chopped onion, and sauté for a few minutes.
  2. Add 1 finely sliced green chili pepper. Sauté for a minute.
  3. Add in 1 vegetable stock and a little salt.
  4. Add 3 finely chopped tomatoes and 1 tbsp of red tomato sauce.
  5. Mix well together and finally add in 3 cups of basmati rice.
  6. Stir the rice well into the mix. Pour in 3 cups of boiled water, simmer and cover with a lid.
  7. After 20-25 mins check the rice and add a little water if necessary.
  8. Sprinkle a handful of freshly chopped coriander before serving.
