Pomegranate Chicken Salad




Pomegranate Chicken Salad


2 tablespoons apple cider vinegar
1 tablespoon raw honey
1 tablespoon finely chopped shallot
1 1/2 teaspoons Dijon mustard
3 tablespoons olive oil
Sea salt and freshly ground pepper


2 heads lettuce
1/2 cup walnuts
1 apple (quartered and cored and the thinly sliced)
1/2 cup pomegranate seeds
2 cups cooked chicken breast (diced)
1/4 cup tarragon leaves


Stick all the dressing ingredients into a jar with a lid, and shake until they’re well combined.

Toss all of the remaining ingredients together, and coat with the dressing.
