Pasta Fagioli (Genovese Style)
For this dish you need to use a type of pasta called ditali, like the one used for koshary.
First, add lots of water to half a packet of white beans, and leave for a few hours. Boil in salted boiling water until al dente and drain.
In a pan add 5 tbsp of olive oil, 1 chopped white onion, 2 finely chopped garlic cloves, 1 stem of chopped celery, 1 vegetable stock cube, and cook until the onion and celery turn soft.
Add the drained beans.
Stir for a few minutes before adding 8 slices of chopped beef bacon. Season with a little salt and fresh black pepper.
Stir well then add 2 tsp of red tomato paste. Add water that is enough to cover the beans and simmer until they are fully cooked. You may need to add more water later.
Add 2 sprigs of fresh rosemary after 15 minutes of cooking. When soft and ready remove the rosemary then use a hand blender to create a smooth paste.
Drizzle more olive oil and season with more fresh black pepper. Mix this with the pasta. Serve.
