Get a whole chicken and cut into 4 pieces.
Wash and tap dry well before smothering some Lebanese zaatar (oregano) generously all over.
Then squeeze 3 lemons over the chicken, season with a little salt and freshly ground black pepper, and drizzle some extra virgin olive oil.
Place the chicken pieces into an oven-proof dish, and switch the oven on 180 degrees for 10 minutes before placing the chicken to cook for approx. 45 minutes.
