Omelette (Italian style)

In a glass bowl add 6 eggs, 1 small chopped tomato, a small handful of fresh parsley, a half cup of freshly grated parmesan, 5 finely sliced mushrooms, and some salt and fresh black pepper. Mix well together.

In a frying pan add 3 tbsp of oil, slice 1 small onion into thin strips and cook for a few minutes, then add 1 courgette chopped into small cubes. Cook for a minute before adding the egg mix. Don’t over cook, and serve with a fresh baguette!
