Indian Lentil Basmati Rice



Indian Lentil Basmati Rice

Soak 2 cups of basmati rice in a pan full of water for a half hour then drain well.

Add 10 cardamom seeds, 1 tsp of cumin seeds, half a tsp of cinnamon powder, 1 tsp of black peppercorns, 1 tsp of curry powder into a blender. Mix well.

In a large pan add 2 tablespoons of corn oil.

Add the spices to the hot oil and stir for 1 minute.

Add in the drained rice and mix well into the spices for 2 minutes.

Then add in 1 cup of yellow lentils, mix well together and season with some salt.

Now pour 2 and a half cups of boiling water.

Mix well then place a small towel on top of the pan, cover that with a lid and lift the sides of the towel over the top of the lid so it does not catch fire!

Reduce the heat and wait for 20 minutes. The reason for the towel is that it allows the rice grains to be fluffy.

When you are done leave the rice to settle with the steam for 2 minutes.

Before serving, scatter a handful of chopped fresh coriander on top.
