A Happy Salad

In a large salad bowl add:
2 cups shredded red cabbage
2 cups of shredded white cabbage
1 thinly sliced red pepper
1 thinly sliced green onion
2 grated cucumbers
1 grated peeled carrot
A handful of halved cherry tomatoes
1 red apple peeled and diced into small cubes
3 boiled beetroots cut into cubes
A handful of pine nuts that have been slightly toasted in olive oil.

A half cup of olive oil
2 squeezed lemons
1 tsp of balsamic vinegar or balsamic cream
2 tsp of mustard
A little salt

Stir well and add it to your salad!
