Egyptian Lentil Soup

Try to this recipe for lentil soup, a popular Egyptian classic!

Wash some yellow lentils well.

In a large pan add the washed lentils and cover them with water.

Add 1 tomato chopped into quarters, 1 potato peeled and chopped into quarters, 1 carrot peeled and chopped into quarters, and season with salt.

Bring to a boil. Simmer for half an hour.

Remove any froth that forms, then remove from the heat.

Strain using a vegetable strainer and puree the lentils in a blender.

Chop 1 large onion, and fry in some oil until golden.

Add the strained lentils, the broth and 1 tsp of cumin powder and simmer for about 10 minutes.

Serve with fried bread squares using white toast (or croutons).
