Curried Basmati Rice

 

Curried Basmati Rice

In a bowl add 2 cups of basmati rice and cover with water for a half hour, then drain well.

In a large pan add:
3 tbsp of oil
1 tsp of ground cumin
2 cinnamon sticks
7 peeled cardamons
3 tsp of a curry powder of your choice
1 tsp of dry coriander

Stir for 2 minutes.

Add in the drained basmati rice and stir well for 3 minutes. Season with some salt. Add 2 and a quarter cups of boiled water.
Stir well for a minute then simmer. Cover the pan first with a kitchen towel or some foil paper then add the lid to cover. Leave the rice for approx 20 minutes. Add a little water if necessary. When ready, sprinkle a handful of fresh chopped parsley then serve.
