Wash and dry all fruit.

Cut them into bite sized pieces.

Prepare you water bath for the chocolate:

In a medium sauce pan, bring 3 cm of water to a rolling boil.

Put desired amount of chocolate in a heat safe metal bowl.

This bowl is going to nest inside the saucepan, be sure the bottom of the bowl does not touch the water inside.

Reduce heat to a simmer and put chocolate nesting bowl on top of the saucepan. Chocolate will gradually melt.

Stir with a spatula and sweeten with maple syrup or stevia, and add your spices. Leave chocolate over simmering water bath while you dip fruit so it does not harden.
