Boil 2 chicken pieces in boiling water
Add a small peeled onion, some salt and 2 bay leaves
When fully cooked, drain and remove the chicken and set to cool
When the chicken is ready add in the pieces (remove skin and bones first)
Add a large handful of halved cherry tomatoes
a handful of sliced fresh basil
2 handfuls of thinly sliced red cabbage
4 boiled and sliced beetroots
a handful of walnuts
some sliced chevre cheese
2 tsp of chopped chives
then mix all together

2 tbsp of mayonnaise
2 tbsp of mustard
5 tbsp of olive oil
2 lemons
a pinch of salt

Mix the dressing well together and add to your salad.
