Chicken with Cream and Veggies

Chicken with Cream and Veggies

Get 4 pieces of chicken breast. Place a cling film on top and bang them to flatten them a little.

In a pan add a knob of butter and a little olive oil.

Add in 1 very finely chopped carrot, 1 very finely chopped courgette, 1 plate of very finely chopped fresh mushroom and stir well till they soften.

Season with a little salt and freshly ground pepper.

Now add in a handful of halved cherry tomatoes. Stir well.

Remove from the fire and place the mix on top of each chicken piece.

Fold the chicken in half and place a few toothpicks to hold together.

Drizzle a little olive oil on the breast and sprinkle grated Parmesan on top. Add 2 sprigs of fresh rosemary.

Place them back in the hot pan and cook on both sides for a few minutes.

Then drizzle cooking cream all over (approx. half a cup) and place them into a hot oven till they are fully cooked.

When they are ready remove the toothpicks and serve with steamed broccoli and oven roasted garlic potatoes.
