Calamari Rice Noodle Dish

  1. Bring out your wok! Pour half a cup of corn oil, and put it on high heat.
  2. Add a tsp of finely chopped red chili pepper, a tsp of finely chopped garlic, half a cup of finely chopped green onions, mix for a minute, then add a half cup of shredded courgette, a half cup of shredded carrots, and one chopped red pepper.
  3. Mix them around for another minute.
  4. Now add 3 tbsp of sweet chili sauce. Stir.
  5. Finally add in the calamari slices (half a kilo). Stir for 2 minutes, but don’t over cook them! Turn off the heat.
  6. In another large pan boil a good amount of water and add in the noodles to soften for a couple of minutes.
  7. Drain and add the noodles to the wok.
  8. Open the fire and mix well until it’s covered in the delicious calamari mix.
  9. Add more sweet chili sauce if necessary, and sprinkle some fresh coriander.
  10. Make some steamed rice to go with this dish.
