Calamari Rice Noodle Dish
- Bring out your wok! Pour half a cup of corn oil, and put it on high heat.
- Add a tsp of finely chopped red chili pepper, a tsp of finely chopped garlic, half a cup of finely chopped green onions, mix for a minute, then add a half cup of shredded courgette, a half cup of shredded carrots, and one chopped red pepper.
- Mix them around for another minute.
- Now add 3 tbsp of sweet chili sauce. Stir.
- Finally add in the calamari slices (half a kilo). Stir for 2 minutes, but don’t over cook them! Turn off the heat.
- In another large pan boil a good amount of water and add in the noodles to soften for a couple of minutes.
- Drain and add the noodles to the wok.
- Open the fire and mix well until it’s covered in the delicious calamari mix.
- Add more sweet chili sauce if necessary, and sprinkle some fresh coriander.
- Make some steamed rice to go with this dish.
