Beetroot Salad with Tahini Dressing

 

 

Beetroots are natural blood cleansers and are chock-full of vitamins and minerals. Tahini contains carbohydrates and proteins and good fats. Combined, you get a filling nutritious addition to your day.

You can use raw beetroot in this salad for a crunchy nutritious salad. If you prefer your beets cooked, then boil and cube them.

 

Ingredients 

Raw beetroot| 400g (about 5 small beets)

Flat leaf parsley| 40g (about 2 cups) finely chopped

Spring onions|3 chopped

Olive oil|1 tbs.

Lemon juice|1 tbs.

Salt and pepper to taste

 

Dressing 

Boiling water | 10 tbsp.

Tahini paste| 5 tbsp.

Lemon|1

Olive oil|1 tbsp.

Garlic clove   |1 small

Pinch of sea salt

 

Directions

1. First prepare the tahini dressing. Crush the garlic in a pestle and mortar with enough salt to absorb its juices. Scrape into a bowl.

 

2. Add the tahini paste (make sure you stir the tahini in the jar as the oil settles on the top).

 

3. Add the boiling water gradually and stir. The consistency should be of single cream.

 

4. Add the juice of a lemon and set aside.

 

5. Slice the raw beetroot very finely and place in a bowl with the rest of the beetroot salad ingredients.

 

6. Stir in the tahini dressing.

 

Healthytude Tip: Add the mix on to a bed of leafy greens (example: lettuce, cabbage, broccoli) for maximum ‘greenifying’ benefits!
