Arugula, Apple and Walnut Salad
Your taste buds will thank you for this tasty salad!
Apples are nutritional powerhouses loaded with vitamin C and fiber.
Walnuts are loaded with good fats and omega 3 fatty acids which are awesome for your brain.
Arugula – you can never have enough greens so keep going!
Ingredients
Baby arugula| 3 cups (preferably organic)
Walnuts or pecans| 1½ cup
Apple| 1 whatever kind you like, thinly sliced
Dried raisins or cranberries| 1/4 cup
Red onion| 1/4 cup, thinly sliced (optional)
Dressing
Balsamic vinegar| 2 tbsp.
Honey| 2 tbsp
Olive oil| 3 tbsp.
Salt and black pepper
Directions
1. Toast walnuts or pecans for 8-10 minutes in oven at 350 degrees.
2. While nuts are toasting, prep salad ingredients and add to a large bowl.
3. Prepare dressing in a jar and shake. Taste and adjust flavor.
4. Add pecans to salad and top with dressing.
5. Toss to combine and serve immediately.
