Cabbage Salad with Ginger-Tahini Dressing


Ingredients


2 cup shredded red cabbage


1/2 cup shredded white cabbage


2 carrots, grated


1 medium sized beetroot, grated


1 cup cilantro, grated


1 jalapeno pepper seeded and cut into thin slivers


1/4 cup raw nut (peanuts or almonds)


1/2 cup raisins


2 tablespoons sesame seeds


1 chicken breast


 


Ginger-Tahini Dressing


Ingredients


3 green onions: white and light green parts only, minced


1/4 cup water


2 tablespoons tahini


1 tablespoon fresh lime juice


1 tablespoon rice wine vinegar (apple cider vinegar)


1 tablespoon honey


1 1/2 tablespoon freshly grated ginger


1/2 teaspoon crushed red pepper flakes


1/4 cup low sodium tamari or soy sauce
